I cook a lot more than I used to, as well, and I find that focusing on things that keep well for a few days makes things easier. It's also like most things - once you do a couple of things at the outset, it's easier to learn how to do more.

I second one of the other comments on the feed - the Joy of Cooking goes a long way to solve these problems. There's a lot in there about the chemistry of food. I would also add in the Flavor Bible - this isn't really home ec, per se, so much as something that tells you how to use ingredients you have on hand to make interesting and flavorful combinations. We get a lot of use out of it, here.

Which also comes down to, if you allot a bit of time for cooking for the week, and you just keep ingredients on hand, there's a lot of stuff you can just throw together quickly that's good. Slow cookers help in this regard, too.

(Now I'm thinking I should make chili tomorrow. Well, that's an idea. ^_^)

Hm... I may pick up a Joy of Cooking if I don't have it around already.

My big meal on this past Saturday actually turned out pretty well. Craziest new thing was a lime sorbet. People also seemed to like the chicken with white wine sauce, but I wasn't that impressed by it, I think the failing was likely in my technique but that means I'll probably just try something new instead.

Also, my email notification of comments seems to be broken. That's worrying.
